Almond Encrusted Fish



Hey there!

I made a great dinner last night and the guys really liked it.  I made this one up as I went along so, there really isn't a tried and true recipe.  Of course, I added more butter to the skillet (Yum!) and olive oil when I added more pieces of the cod.  So just have fun and experiment with whatever tastes you or your family likes.  Enjoy!
 
Almond Encrusted Fish 
 
  • 1 cod fillet (you can also use tilapia  but cod doesn't flake as much as tilapia when cooked) The fillet that I got was fresh from the fish department.
  • 1/4 to 1/2 cup Almond meal (Trader Joe's Nuts - Just Almond Meal)
  • 1 egg white (stirred)
  • 2 Tbsp. Olive Oil 
  • 2 Tbsp Whipped Butter (I used LandOLakes)

Cut the cod into about 1 inch strips.  (For the thicker pieces of the cod, slice the width of it so that it all of the pieces are the same thickness.  This will help ensure that they are cooked thoroughly.)  Put the olive oil and butter into a skillet and start it over medium heat.  Separate the egg white into a shallow bowl.  Take a fork and whip it a few times to give the egg white a good consistency. Pour approximately 1/2 cup of almond meal into a shallow pan (I use my 9x9 pan or you can use a plastic bag that seals). Dip the cod into the egg whites then dip the cod into the meal.  Be sure to coat all the sides.  Put the cod into the heated oil/butter pan.  Heat for approx. 3-4 minutes each side.  If you add more cod, you can always add more olive oil and butter.  Remove from pan and enjoy!

If you want to be more adventurous... you can add salt, pepper, and any spices to the almond meal.  I would add between 1/8 or 1/4 tsp. of any spice to the meal depending on taste or what you happen to be serving with the cod.  Be adventurous because possibilities are endless! 
 
If you are just beginning to experiment with spices, here are some good combinations to try garlic powder and oregano, rosemary and thyme (pronounced like time),  or basil and oregano.  Just be creative until you find the right combination.
